Anyone happen to know why on the Network West Midlands website there are listings for pretty much every bus route in southern England?

Because they share the data feeds with the other traveline Systems on the south coast

The West Midlands version of Traveline (MDV) is also the one used in various other Traveline regions, the NWM website just uses this information.  Although only the West Midlands, East Midlands, South West, South East & Anglia and London regions are specifically covered (so not the North of England), it should be possible to plan journeys across Traveline regions not covered as the data for these is uploaded into it as well in theory.  Which does provide an alternative to the now defunct Transport Direct.
