Well I knew they stayed on the 34/37/39 as I had seen them swap but wondered if a bus would end up on a 11 or 123 or 4 after doing a 37/39/34

None are planned to, but can be swapped if needed

I suppose that it depends on what garage has buses to spare when Rail Replacements need to operate, so yes Walsall wouldn't be the ideal choice, I don't suppose that it would be impossible for them to operate them either.
Pensnett is my local garage. Favourite bus of all time is Fleetline 6360 (KON 360P).

It's not that farfetched. Vehicles have other garages routes programmed into them so having Rail Replacements also programmed doesn't seem too off.

The NX vehicles I've seen on rail replacement duties have always just shown "Rail Replacement" with the old British Rail logo on the front displays, with the same logo shown on the rear display. I've seen some of AG's E200s that scroll the stations on the side display. But I've never seen any that showed the destination on the front.

With regards to which garage would operate RR services, it would depend on if a garage had vehicles spare and the proximity to the line they were being used on. In recent years, I do tend to see AG's E200s used on Snow Hill replacements between Snow Hill and Dorridge, alongside Johnsons. But I did a few years back see a PB Omnilink on RR duties at Olton station.

NX vehicles i've seen recently display rail replacement and then bellow the stations it is calling at are scrolling.

Walsall1955

In April 2015 on Chase Line rail replacements I noticed that most buses had no destinations / station names displayed (instead just "RAIL REPLACEMENT" or similar, a few did however have station names additionally displayed, here are some of the photos taken that day showing the variation observed:
